Who We Are Looking For

As our Sous Chef, you will act as the direct co-pilot and partner to Head Chef Justin Klungsøyr. You are not just managing shifts; you are helping to shape the kitchen culture, maintain craft quality, and lead by example.

Your Responsibilities

  • Direct Leadership: Partner closely with Head Chef Justin to oversee daily kitchen operations, prep schedules, and line execution.
  • Line Command: Run the pass during busy services, ensuring high speed, precise plating, and consistent quality across every bowl.
  • Team Development: Train, mentor, and support kitchen assistants and line cooks in technique, safety, and hygiene standards.
  • Kitchen Operations: Manage daily prep lists, assist with stock control/ordering, and minimize food waste through smart inventory habits.
  • Quality & Hygiene: Maintain strict compliance with food safety (IK-Mat) and maintain a clean, organized workspace at all times.
  • Culture Keeping: Foster a safe, inclusive, and energetic environment where the team enjoys coming to work every day.

What We Offer

  • Competitive Salary: Fair, competitive compensation based on your leadership experience and background.
  • True Partnership: A key role with real influence in a growing, independent food concept.
  • Balanced Work Environment: Paid breaks, shift meals, and structured working hours.
  • Room for Growth: Prime position for long-term career progression as the company expands.

Requirements

  • You have a solid foundation in kitchen operations and a genuine curiosity for Japanese culinary philosophy.
  • You possess strong leadership skills and the ability to inspire and support junior kitchen staff.
  • You are dependable, proactive when challenges arise, and treat the kitchen with the care of an owner.
  • You have experience with inventory management, stock control, and minimizing food waste.
  • You are committed to maintaining strict food safety and hygiene standards.
